Ready to try something new? In a recent survey of our customers 91% of you said that you are being more adventurous with your cooking at the moment.* So we wanted to give you a challenge that you can try at home which helps you to love your leftovers and make your Sutton Hoo Chicken go further.

Meal 1: Goan Spiced Butter Chicken with Cauliflower

We like to start our three meal challenges by roasting a whole bird. In this different take on a roast chicken, the whole bird is roasted with Goan spices in butter and then while it is resting, cauliflower is roasted in all the spiced juices. It looks really impressive and tastes so good – perfect for when you need a treat.

If you are sharing it for two, you might like to enjoy a bit of breast meat, and a whole drumstick each, keeping the thighs, wings and breast meat back for your other meals.

When you have finished the roast, it’s time to strip all the meat off your carcass, before using it to make your stock. The Pho doesn’t use much chicken meat, so save the best bits in an airtight container in the fridge ready for making meal three.

The slow cooked stock is what really makes this meal glorious. Pho is also very versatile, you can use a number of different ingredients. The stock, coriander and a bit of chicken are the must haves, after this you can experiment! Any type of noodles will work, cabbage (our personal favourite) / spinach / beans / bean sprouts and spring onions are all lovely in a pho, so use what suits you. 

The stock needs to cook for a while, so it’s best to start it off straight after your roast, but once it is prepared, Tony’s Sutton Hoo Chicken Pho can be made in just a few minutes. If you have saved your Goan Spiced roasted wings, they might make a tasty appetiser to have as a snack before your pho.

The clue is in the name of this recipe. It is perfect for a weekday meal when you are short on time. You can also make this in advance and it will improve with age. Serve with rice plus mango chutney and poppadoms if you fancy.

Extra bonus: if you have anything left over, the Goan spiced roast meat makes a delicious Sutton Sarnie. Just add some salad, mayonnaise and a generous dollop of mango chutney.
